Palak Paneer

One of my favorite, quick, easy to make curries. Unfortunately this one isn't one I can easily double the recipe on. The sheer volume of the uncooked spinach fills up the instant pot.

Ingredients

  • 6 cloves garlic
  • 2 tsp fresh ginger
  • 1 jalapeño
  • 1 large yellow onion
  • 2 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • 2 tsp garam masala
  • 1 tsp turmeric
  • 1 tsp salt
  • 2 tsp peanut oil
  • 1/2 c water
  • 1 can tomatoes
  • 1 lb spinach
  • 1 1/2 c paneer

Steps

  1. Chop garlic, fresh ginger, and deseeded jalapeño and put in a bowl

  2. Chop large yellow onion and place in a bowl with ground cumin, cayenne pepper, garam masala, turmeric and salt

  3. Select sauté on the instant pot

  4. Add peanut oil and heat until it is shimmering

  5. Add the bowl of garlic, ginger, jalapeño and cook for about one minute

  6. Add the bowl of onion, cumin, cayenne garam masala.

  7. Add water and drained tomatoes and stir

  8. Add spinach and mix as best you can. This gets a bit unwieldy. It is okay if it isn't well mixed.

  9. Cook on manual/high pressure for 4 minutes. Once it is done quick release

  10. While this is cooking chop paneer in small cubes

  11. When the cooking is finished purée until smooth

  12. Mix in paneer and serve
